I've always been a fan of beef and pork.  Growing up it was sirloin steaks, hamburgers, sausage wraps and a treat every now and then to pickup some real Texas bbq.  Loving proteins run deep.

I think the first time I every used a wood fired grill was a freshman in college making hamburgers and sausage.  I didn't graduate to an offset smoker until maybe 2001.  Those first briskets were misshapen, smokey and a little bit tough, but it still tasted good to me.  Those early days built a passion for trying to always improve and make the best bbq I could.  Over twenty years later and i'm still trying to improve with every cook and it has been a great journey.  I've had the opportunity to be taught and attend classes by three of the top 10 bbq restaurants in the state and look for every chance to learn from others and look over their shoulder.  I put all of that into Peters Craft BBQ.

What is 'craft' bbq?  I try to explain it as an obsession to analyze and attempt to control absolutely every aspect of cooking bbq to generate the best possible taste outcome.  From selecting the best quality product, to trimming and shaping the meats for optimal airflow, for managing a fire not just for consistent heat, but for movement and duration.  Further, using this with proper mesh sized spices and smoke to build a wonderful, flavorful bark.  Excessively long rests for the meats, proper slicing, and instagram worthy presentations are more hallmarks of craft bbq.  It's a focus and determination that can only come from loving the process and trying to make the best product for your family and friends.
